German Style Sauerkraut with Pork Chops

Description

This classic German-style dish features tender pork chops simmered with sauerkraut, onions, and warm spices. The pork becomes juicy and flavorful while the sauerkraut turns mild, savory, and comforting. It’s a hearty, cozy meal perfect for family dinners.

Ingredients

For the Pork Chops

  • 4 bone-in or boneless pork chops
  • Salt and black pepper, to taste
  • 1 tablespoon vegetable oil or butter

For the Sauerkraut

  • 1 large jar (about 32 oz / 900 g) sauerkraut, drained (rinse lightly if very sour)
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth or beef broth
  • 1 tablespoon brown sugar (optional, to balance acidity)
  • 1 teaspoon caraway seeds (traditional but optional)
  • ½ teaspoon smoked paprika
  • 1 bay leaf
  • 1 tablespoon butter

Instructions

  1. Season the Pork Chops
    Pat the pork chops dry and season both sides with salt and black pepper.
  2. Brown the Pork Chops
    Heat oil or butter in a large skillet or Dutch oven over medium-high heat.
    Sear the pork chops for 2–3 minutes per side until golden brown.
    Remove and set aside.
  3. Cook the Onions & Garlic
    In the same pan, add butter if needed.
    Add sliced onions and cook for 5–7 minutes until soft and lightly caramelized.
    Stir in the garlic and cook for 30 seconds.
  4. Add Sauerkraut & Seasoning
    Add the sauerkraut, brown sugar, caraway seeds, smoked paprika, and bay leaf.
    Stir well to combine.
  5. Simmer with Broth
    Pour in the broth and bring to a gentle simmer.
  6. Add Pork Chops Back
    Nestle the pork chops into the sauerkraut mixture.
  7. Cover & Cook
    Reduce heat to low, cover, and simmer for 30–40 minutes, until the pork chops are tender and fully cooked (internal temperature: 145°F / 63°C).
  8. Final Taste
    Remove bay leaf. Taste and adjust salt, pepper, or sugar if needed.
