No-Bake Fruit & Nut Milk Dessert Roll

Ingredients

  • 500 ml milk (2 cups)
  • 3 tbsp sugar (adjust to taste)
  • 4 tbsp cornstarch
  • 2 tbsp butter
  • 1 tsp vanilla extract

Mixed fillings (use what you like):

  • ½ cup peanuts or almonds
  • ½ cup cashews
  • ½ cup dried cranberries or raisins
  • ½ cup dried apricots (chopped)
  • ½ cup mixed candied fruit or tutti frutti (optional)

Instructions

  1. Prepare the fruits & nuts
    • Chop large nuts and dried fruits into small pieces.
    • Mix everything in a bowl and set aside.
  2. Make the milk base
    • In a pot, whisk milk, sugar, and cornstarch until smooth.
    • Cook on medium heat, stirring constantly until thick like pudding.
  3. Add flavor
    • Turn off heat.
    • Mix in butter and vanilla until smooth.
  4. Combine
    • Immediately add the mixed nuts and dried fruits.
    • Stir well so everything is coated.
  5. Shape the roll
    • Spread mixture on plastic wrap or parchment.
    • Roll tightly into a log shape.
    • Refrigerate 4–6 hours (or overnight) until firm.
  6. Serve
    • Slice and enjoy cold.

  • Add honey instead of sugar for richer taste.
  • You can include pistachios, dates, or coconut.
