🍗 One Pan Chicken and Potatoes
Ingredients:
4–6 chicken thighs or drumsticks (bone-in or boneless)
4 cups baby potatoes (or potatoes cut into chunks)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons melted butter (optional for extra flavor)
1 tablespoon lemon juice (optional)
(Optional) 1 cup carrots or green beans
Instructions:
Preheat the oven:
Preheat oven to 400°F (200°C). Grease or line a baking sheet.
Season potatoes:
In a bowl, toss potatoes with olive oil, garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper.
Season chicken:
Pat chicken dry.
Rub chicken with a little olive oil (or melted butter) and season with salt, pepper, and extra paprika if desired.
Arrange on pan:
Spread potatoes evenly on the baking sheet.
Place chicken pieces on top or beside potatoes.
Add vegetables if using.
Bake:
Bake for 40–50 minutes, until chicken reaches 165°F and potatoes are tender.
Broil (optional):
Broil for 2–3 minutes for crispier skin.
Serve:
Drizzle with lemon juice before serving if desired.
