Fried Pickle Egg Rolls

It looks like deep-fried pickle egg rolls (big pickle stuffed with cream cheese and bacon, wrapped and fried). Here’s how to make them at home.

Fried Pickle Egg Rolls

Ingredients

  • 4 large whole dill pickles
  • 8 egg roll wrappers
  • 200 g (7 oz) cream cheese, softened
  • ½ cup shredded cheddar cheese
  • 4–6 strips cooked bacon, crumbled (optional but tasty)
  • 1 egg (for sealing wrappers)
  • Oil for frying

Optional dipping sauce: ranch or garlic mayo.

Instructions

1. Prepare the pickles

  • Drain pickles and pat them very dry with paper towels (important so oil doesn’t splatter).

2. Make the filling

  • Mix cream cheese, cheddar cheese, and bacon in a bowl until smooth.

3. Stuff the pickles

  • Cut each pickle lengthwise halfway (don’t cut all the way through).
  • Fill the center with the cream cheese mixture.

4. Wrap

  • Place a stuffed pickle on an egg roll wrapper.
  • Roll tightly like a burrito, folding in the sides.
  • Seal edges with beaten egg.

5. Fry

  • Heat oil to about 175°C (350°F).
  • Fry 2–3 minutes until golden brown and crispy.
  • Remove and drain on paper towels.

6. Serve

  • Let cool slightly, slice, and serve with ranch or your favorite dip.
