Ingredients

  • 1 cup unsweetened shredded coconut
  • 2 tablespoons unsweetened cocoa powder
  • 1 egg
  • 2–3 tablespoons zero-calorie sweetener (like stevia or monk fruit)
  • ½ teaspoon vanilla extract
  • 10–12 whole almonds (one for each cookie)
  • Pinch of salt (optional)

Instructions

  1. Preheat oven
    • Set oven to 350°F (180°C).
    • Line a baking sheet with parchment paper.
  2. Mix ingredients

  3. Shape cookies
