Garlic Parmesan Chicken & Steak Bake with Cheesy Loaded Mashed Potatoes

Ingredients:

For the Chicken & Steak Bake:

2 boneless, skinless chicken breasts
2 ribeye or sirloin steaks (6 oz each)
3 tablespoons olive oil
1/4 cup grated Parmesan cheese
3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
For the Cheesy Loaded Mashed Potatoes:

4 large russet potatoes, peeled and diced
1/2 cup whole milk (or more as needed)
1/4 cup butter
1/2 cup shredded cheddar cheese
1/4 cup sour cream
4 slices bacon, cooked and crumbled
2 green onions, chopped
Salt and pepper to taste
Directions:

Preheat oven to 400°F (200°C).
In a small bowl, mix olive oil, Parmesan cheese, minced garlic, oregano, paprika, salt, and pepper.
Place chicken breasts and steaks in a baking dish. Brush the garlic Parmesan mixture evenly over both sides of the meat.
Bake for 20-25 minutes, flipping halfway through, or until the chicken reaches an internal temperature of 165°F and the steak reaches your desired doneness (135°F for medium rare, 145°F for medium). Remove and let rest for 5 minutes.
For the Cheesy Loaded Mashed Potatoes:

  1. Boil the diced potatoes in salted water for 15-20 minutes, or until tender. Drain and return to the pot.
  2. Add milk, butter, cheddar cheese, sour cream, salt, and pepper to the potatoes. Mash until creamy, adding more milk if needed.
  3. Stir in crumbled bacon and green onions. Adjust seasoning to taste.

To Serve:

  1. Plate the chicken and steak alongside the loaded mashed potatoes. Garnish with fresh parsley and extra Parmesan if desired. Serve warm and enjoy!
