Garlic Parmesan Chicken & Steak Bake with Cheesy Loaded Mashed Potatoes
Ingredients:
For the Chicken & Steak Bake:
2 boneless, skinless chicken breasts
2 ribeye or sirloin steaks (6 oz each)
3 tablespoons olive oil
1/4 cup grated Parmesan cheese
3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
For the Cheesy Loaded Mashed Potatoes:
4 large russet potatoes, peeled and diced
1/2 cup whole milk (or more as needed)
1/4 cup butter
1/2 cup shredded cheddar cheese
1/4 cup sour cream
4 slices bacon, cooked and crumbled
2 green onions, chopped
Salt and pepper to taste
Directions:
Preheat oven to 400°F (200°C).
In a small bowl, mix olive oil, Parmesan cheese, minced garlic, oregano, paprika, salt, and pepper.
Place chicken breasts and steaks in a baking dish. Brush the garlic Parmesan mixture evenly over both sides of the meat.
Bake for 20-25 minutes, flipping halfway through, or until the chicken reaches an internal temperature of 165°F and the steak reaches your desired doneness (135°F for medium rare, 145°F for medium). Remove and let rest for 5 minutes.
For the Cheesy Loaded Mashed Potatoes:
- Boil the diced potatoes in salted water for 15-20 minutes, or until tender. Drain and return to the pot.
- Add milk, butter, cheddar cheese, sour cream, salt, and pepper to the potatoes. Mash until creamy, adding more milk if needed.
- Stir in crumbled bacon and green onions. Adjust seasoning to taste.
To Serve:
- Plate the chicken and steak alongside the loaded mashed potatoes. Garnish with fresh parsley and extra Parmesan if desired. Serve warm and enjoy!
