Creamy taco soup

Ingredients

  • 1 lb ground beef (or turkey)
  • 1 small onion, diced
  • 2 clips garlic, minced
  • 1 packet taco seasoning
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can black beans, drained & rinsed
  • 4 cups beef or chicken broth
  • 1 cup heavy cream (or half‑and‑half)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • Fresh cilantro & diced tomatoes for garnish
  • Salt & pepper to taste

Instructions

  1. Brown the ground beef with onion & garlic in a large pot over medium heat; drain excess fat.
  2. Add taco seasoning and stir for 1 min.
  3. Mix in diced tomatoes, black beans, and broth. Bring to a simmer, 5‑7 min.
  4. Stir in heavy cream & cream cheese until smooth.
  5. Add shredded cheddar; let melt, then season with salt & pepper.
  6. Serve hot, topped with cilantro & fresh tomato pieces.
