Chicken & Potato Casserole

Here’s a simple, hearty Chicken and Potato Casserole with Garlic Sauce Salad you can make at home—creamy, filling, and full of flavor 😋

🥔🍗 Chicken & Potato Casserole

🛒 Ingredients:

  • 4 eggs
  • Salt, to taste
  • Black pepper, to taste
  • 100 ml cream (20–30%)
  • 1 onion, finely chopped
  • 5 potatoes, peeled & thinly sliced
  • 2 chicken fillets, diced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced (optional but recommended)
  • 1/2 tsp paprika (optional)
  • 1/2 cup shredded cheese (optional, for topping)

👩‍🍳 Instructions:

  1. Preheat oven to 180°C (350°F).
  2. Cook the chicken:
    • Heat olive oil in a pan.
    • Add onion and sauté until soft.
    • Add diced chicken, garlic, salt, pepper, and paprika.
    • Cook until chicken is lightly golden (about 5–7 minutes).
  3. Prepare egg mixture:
    • In a bowl, whisk eggs with cream, a pinch of salt, and pepper.
  4. Layer the casserole:
    • Grease a baking dish.
    • Add a layer of sliced potatoes.
    • Add a layer of cooked chicken mixture.
    • Repeat layers until everything is used (finish with potatoes on top).
  5. Pour mixture:
    • Pour the egg & cream mixture evenly over the casserole.
    • Add cheese on top if using.
  6. Bake:
    • Cover with foil and bake for 40 minutes.
    • Remove foil and bake another 15–20 minutes until golden and potatoes are tender.
  7. Rest:
    • Let it sit for 5–10 minutes before serving.

🥗 Garlic Sauce Salad

🛒 Ingredients:

  • Lettuce, chopped
  • Tomato, diced
  • Cucumber, sliced
  • 2 tbsp mayonnaise or yogurt
  • 1–2 cloves garlic, crushed
  • 1 tbsp lemon juice
  • Salt, to taste

👩‍🍳 Instructions:

  1. In a bowl, mix mayo (or yogurt), garlic, lemon juice, and salt.
  2. Add vegetables and toss well.
  3. Chill for 10 minutes before serving for best flavor.

💡 Tips:

  • Slice potatoes very thin so they cook faster.
  • You can add carrots or mushrooms for extra flavor.
  • If you want it lighter, replace cream with milk.
