🍲 French Onion Beef Short Rib Soup
All the deep, savoury flavour of French onion soup, combined with melt-in-your-mouth braised beef short ribs. The ultimate bowl of comfort topped with cheesy, toasted bread.
Ingredients:
1kg beef short ribs
Salt and black pepper
2 tbsp olive oil
4 large onions, thinly sliced
4 cloves garlic, minced
2 tbsp plain flour
1 litre good quality beef stock
2 sprigs fresh thyme
2 bay leaves
4 slices of baguette
1 1/2 cups grated Gruyère or Emmental cheese
Fresh parsley, chopped
Directions:
Preheat oven to 160°C (325°F). Season short ribs generously with salt and pepper.
Heat olive oil in a large, oven-proof pot or Dutch oven over high heat. Brown the short ribs on all sides. Remove and set aside.
Reduce heat to medium-low. Add the sliced onions and cook, stirring occasionally, for 25-30 minutes until deeply caramelized and golden brown.
Add the garlic and cook for 1 minute. Stir in the flour and cook for another minute.
Gradually pour in the beef stock, stirring constantly. Add the thyme and bay leaves. Bring to a simmer.
Return the short ribs to the pot, submerging them in the liquid. Cover with a lid and place in the preheated oven for 2.5 – 3 hours, until the beef is fork-tender.
Remove the pot from the oven. Discard herb sprigs and bay leaves. Skim off any excess fat from the surface.
Ladle the soup into oven-safe bowls. Top each with a slice of baguette and a generous handful of grated cheese.
Place under a hot grill until the cheese is melted, bubbly, and golden. Garnish with parsley and serve immediately.
