Ingredients:
- 2 cups finely shredded cabbage
- 2 large eggs
- ½ cup grated carrot (optional for extra color & nutrition)
- ¼ cup finely chopped onion
- 2-3 tbsp all-purpose flour or chickpea flour (for binding)
- 1-2 green chilies, finely chopped (optional)
- ½ tsp turmeric powder
- ½ tsp cumin powder
- Salt and pepper, to taste
- 2-3 tbsp oil, for frying
- Fresh herbs (cilantro or parsley), chopped, for garnish
Instructions:
- Prep the cabbage: Wash and finely shred the cabbage. Pat dry with a kitchen towel to remove excess moisture.
- Mix ingredients: In a large bowl, combine shredded cabbage, eggs, onion, carrot, green chilies, flour, turmeric, cumin, salt, and pepper. Mix well until the mixture holds together.
- Heat oil: Heat 2 tablespoons of oil in a non-stick skillet over medium heat.
- Form fritters: Scoop 2-3 tablespoons of the mixture and gently flatten into small patties.
- Fry: Place fritters in the skillet and cook for 3-4 minutes per side or until golden brown and crispy. Add more oil if needed.
- Serve: Remove from the skillet and drain on paper towels. Garnish with fresh herbs and serve hot with ketchup, yogurt dip, or chutney.
Tips:
- For extra crispiness, add 1-2 tbsp breadcrumbs to the mixture.
- These fritters can also be baked at 200°C (400°F) for 15-20 minutes, flipping halfway.
