St. Patrick’s Day 5-Ingredient Comfort Dinner
Tender, melt-in-your-mouth beef with buttery cabbage and potatoes — simple, festive, and the sauce is incredible.

 Ingredients (Just 5!)
3–4 lb corned beef brisket (with seasoning packet)
1½ lbs baby potatoes, halved
3 carrots, cut into chunks
1 small head green cabbage, cut into wedges
1 cup beef broth (or water)

👩‍🍳

 Instructions

1️⃣

 Layer
Place corned beef in a large Dutch oven or roasting dish, fat side up.
Sprinkle seasoning packet over the top.
Pour beef broth around (not over) the meat.

2️⃣

 Roast Low & Slow
Cover tightly with lid or foil.
Bake at 325°F (165°C) for 2½–3 hours, until fork-tender.

3️⃣

 Add the Vegetables
Arrange potatoes and carrots around the beef.
Cover and bake another 30–40 minutes.

4️⃣

 Finish with Cabbage
Add cabbage wedges on top.
Cover and cook 20–25 minutes, until tender but not mushy.

5️⃣

 Rest & Serve
Let beef rest 10–15 minutes before slicing against the grain.
Spoon the rich cooking juices over everything.

Whole grain mustard
Crusty bread
A drizzle of melted butter over the veggies
