The Ultimate Cozy Potato Bake
Creamy, cheesy, golden on top — the kind of comfort dish everyone goes back for seconds
Ingredients
2½ lbs (1–1.2 kg) potatoes, thinly sliced
2 tbsp butter
3 cloves garlic, minced
2 cups heavy cream
½ cup milk
1 tsp salt
½ tsp black pepper
½ tsp dried thyme (or rosemary)
1½ cups shredded cheddar cheese
½ cup grated Parmesan cheese
Instructions
Prep
Preheat oven to 375°F (190°C).
Grease a 9×13-inch baking dish.
Make the Cream Mixture
In a saucepan over medium heat:
Melt butter.
Add garlic and cook 30 seconds.
Stir in heavy cream, milk, salt, pepper, and thyme.
Heat until warm (don’t boil).
Layer the Potatoes
Arrange half the sliced potatoes in the baking dish.
Pour half of the cream mixture over them.
Sprinkle with half the cheddar.
Repeat with remaining potatoes, cream, and top with remaining cheddar + Parmesan.
Bake
Cover with foil and bake for 40 minutes.
Remove foil and bake another 20–25 minutes until golden and bubbly and potatoes are fork-tender.
Broil 2–3 minutes for a crispy top if desired.
