Slow Cooker Herb-Crusted Chicken Fillets
Tender, juicy chicken with a flavorful herb coating — easy prep and perfect for a healthy dinner!
Ingredients
4 boneless, skinless chicken fillets (breasts)
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1 tsp dried thyme
1 tsp dried parsley
1/2 tsp paprika
1/4 cup chicken broth
1 tbsp lemon juice (optional, for brightness)
Instructions
Season the Chicken
In a small bowl, mix:
Garlic powder
Onion powder
Oregano
Thyme
Parsley
Paprika
Salt & pepper
Rub chicken fillets with olive oil, then coat evenly with the herb mixture.
Prepare the Slow Cooker
Pour chicken broth and lemon juice into the bottom of the slow cooker.
Place seasoned chicken fillets inside in a single layer.
Cook
Cook on LOW for 4–5 hours or
Cook on HIGH for 2–3 hours
Chicken is done when internal temperature reaches 165°F (74°C).
Optional Crispy Finish
For a lightly crisp herb crust:
Transfer cooked chicken to a baking sheet.
Broil in the oven for 2–3 minutes until slightly golden.
