Creamy taco soup
Ingredients
- 1 lb ground beef (or turkey)
- 1 small onion, diced
- 2 clips garlic, minced
- 1 packet taco seasoning
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (15 oz) can black beans, drained & rinsed
- 4 cups beef or chicken broth
- 1 cup heavy cream (or half‑and‑half)
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- Fresh cilantro & diced tomatoes for garnish
- Salt & pepper to taste
Instructions
- Brown the ground beef with onion & garlic in a large pot over medium heat; drain excess fat.
- Add taco seasoning and stir for 1 min.
- Mix in diced tomatoes, black beans, and broth. Bring to a simmer, 5‑7 min.
- Stir in heavy cream & cream cheese until smooth.
- Add shredded cheddar; let melt, then season with salt & pepper.
- Serve hot, topped with cilantro & fresh tomato pieces.
