Low-Carb Bacon Cheddar Mini Cheese Balls

 Ingredients:
200 g cream cheese (softened)
1 cup shredded cheddar cheese
6–8 slices bacon (cooked crispy & crumbled)
2 tablespoons sour cream (optional, for extra creaminess)
1–2 cloves garlic (minced)
2 tablespoons chopped green onions
1 teaspoon paprika
½ teaspoon black pepper
Salt to taste
Optional Coating:
Extra crumbled bacon
Chopped parsley
Crushed nuts (almonds or pecans)

 Instructions:
Cook the bacon:
Fry until crispy, then crumble into small pieces.
Mix the base:
In a bowl, combine:
Cream cheese
Cheddar cheese
Sour cream
Garlic
Green onions
Paprika, pepper, and a pinch of salt
Add bacon:
Stir in most of the crumbled bacon (reserve some for coating).
Chill (important):
Refrigerate the mixture for 20–30 minutes so it’s easier to shape.
Form mini balls:
Scoop small portions and roll into bite-sized balls.
Coat:
Roll in reserved bacon, parsley, or nuts for extra flavor and texture.
Serve:
Chill until ready to serve or enjoy right away.
