Easy Grilled Filet Mignon

Cook time: 8–12 minutes
Ingredients
Filet mignon steaks: 2–4 steaks (6–8 oz each, 1½–2 inches thick)
Olive oil: 1–2 tbsp
Kosher salt: 1½ tsp
Freshly ground black pepper: 1 tsp
Garlic powder: ½ tsp (optional)
Fresh rosemary or thyme: 2 sprigs (optional)
Butter: 2 tbsp (optional, for finishing)
Instructions
- Prepare the steaks
Remove steaks from the fridge 30 minutes before grilling.
Pat dry with paper towels.
Brush lightly with olive oil.
Season generously on all sides with salt, pepper, and garlic powder. - Preheat the grill
Preheat grill to high heat (230–260°C / 450–500°F).
Clean and oil the grates. - Grill
Place steaks on the hot grill.
Grill 3–4 minutes per side for medium-rare, without moving them.
For crosshatch marks, rotate steaks 90° halfway through each side.
Internal temperature guide:
Rare: 120–125°F (49–52°C)
Medium-rare: 130–135°F (54–57°C) (recommended)
Medium: 140°F (60°C) - Butter baste (optional but recommended)
During the last minute, add butter and herbs to the grill.
Spoon melted butter over steaks. - Rest
Remove steaks and tent loosely with foil.
