Crispy Cheesy Herb Bites with Creamy Dip

For the cheesy herb bites
2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
1 cup all-purpose flour
2 eggs
2 tbsp fresh parsley, chopped (or 1 tbsp dried)
1 tsp garlic powder
½ tsp onion powder
½ tsp dried oregano
Salt & black pepper to taste
Oil for frying
For the creamy dip
½ cup mayonnaise
¼ cup sour cream (or Greek yogurt)
1 tbsp fresh dill or parsley, chopped
1 tsp lemon juice
½ tsp garlic powder

- Make the mixture
In a large bowl, combine mozzarella, cheddar, flour, eggs, herbs, garlic powder, onion powder, oregano, salt, and pepper.
Mix until a thick, sticky dough forms. - Shape the bites
Scoop small portions and roll into bite-sized balls.
Place on a tray and chill for 15–20 minutes (helps them hold shape). - Fry until crispy
Heat oil in a pan over medium heat.
Fry the bites in batches for 2–3 minutes, turning until golden brown and crispy.
Remove and drain on paper towels.
(Alternative: Bake at 200°C / 400°F for 15–18 minutes, flipping halfway.) - Prepare the dip
Mix mayonnaise, sour cream, herbs, lemon juice, garlic powder, salt, and pepper until smooth.
Chill until ready to serve.Serve
Serve hot cheesy bites with the creamy dip on the side.
