Ingredients:
For the Potato Mixture:
- 4 large potatoes
- Salt to taste
- 1/2 tsp black pepper
- 1 tbsp butter
- 2 tbsp cornstarch or flour
For the Filling:
- 200g ground beef or shredded chicken
- 1/2 onion, finely chopped
- 1 garlic clove, minced
- Fresh parsley or cilantro
- Salt, paprika, and black pepper
- Mozzarella cheese cubes
For Coating:
- 2 eggs
- Breadcrumbs
For Frying:
- Oil for deep frying
Instructions:
- Boil the potatoes until soft, then mash them while still warm.
- Add salt, pepper, butter, and cornstarch. Mix until smooth.
- In a pan, cook the onion and garlic with the meat and seasonings.
- Take a small amount of mashed potato, flatten it, and add some filling plus a cube of cheese in the center.
- Shape into balls.
- Dip each ball into beaten eggs, then coat with breadcrumbs.
- Fry until golden brown and crispy.
