Crispy Cheesy Potato Balls

Ingredients:

For the Potato Mixture:

  • 4 large potatoes
  • Salt to taste
  • 1/2 tsp black pepper
  • 1 tbsp butter
  • 2 tbsp cornstarch or flour

For the Filling:

  • 200g ground beef or shredded chicken
  • 1/2 onion, finely chopped
  • 1 garlic clove, minced
  • Fresh parsley or cilantro
  • Salt, paprika, and black pepper
  • Mozzarella cheese cubes

For Coating:

  • 2 eggs
  • Breadcrumbs

For Frying:

  • Oil for deep frying

Instructions:

  1. Boil the potatoes until soft, then mash them while still warm.
  2. Add salt, pepper, butter, and cornstarch. Mix until smooth.
  3. In a pan, cook the onion and garlic with the meat and seasonings.
  4. Take a small amount of mashed potato, flatten it, and add some filling plus a cube of cheese in the center.
  5. Shape into balls.
  6. Dip each ball into beaten eggs, then coat with breadcrumbs.
  7. Fry until golden brown and crispy.
