Creamy Layered Delight: No-Bake Biscuit Pudding Recipe

 Ingredients:

For the Cream Layer:

  • 2 cups (500 ml) whole milk
  • 3 tbsp cornflour (cornstarch)
  • 4 tbsp sugar (adjust to taste)
  • 1 tsp vanilla extract
  • 1/2 cup fresh cream or heavy cream

For the Chocolate Layer (optional but yum!):

  • 1/2 cup milk
  • 100g dark or milk chocolate (chopped)
  • 1 tbsp cocoa powder
  • 1 tbsp sugar
  • 1 tbsp cornflour

For the Biscuit Layer:

  • 200g digestive biscuits or Marie biscuits
  • 1/2 cup milk + 1 tsp instant coffee (for dipping – optional)

For Topping (optional):

  • Grated chocolate or cocoa powder
  • Crushed nuts or biscuit crumbs
  • Whipped cream or chocolate syrup

 Instructions:

1. 

Make the Cream Layer:

  • In a saucepan, mix 2 cups milk, 3 tbsp cornflour, and 4 tbsp sugar.
  • Stir well until smooth, with no lumps.
  • Heat on medium, stirring constantly until it thickens.
  • Once thick, remove from heat, stir in vanilla extract and cream.
  • Set aside to cool slightly.

2. 

Make the Chocolate Layer (optional):

  • In another saucepan, mix 1/2 cup milk, cocoa powder, cornflour, sugar, and chopped chocolate.
  • Heat gently, stirring until chocolate melts and mixture thickens.
  • Let it cool slightly.

Prepare the Biscuit Layer:

  • Mix 1/2 cup milk with coffee (optional).
  • Quickly dip each biscuit into the milk mixture (don’t soak!) and layer in a glass dish.

Assemble the Pudding:

  • Layer 1: Biscuits (dipped)
  • Layer 2: Cream mixture
  • Layer 3: (Optional) Chocolate layer
  • Repeat layers until everything is used, ending with cream or chocolate.

  • Sprinkle grated chocolate, cocoa powder, biscuit crumbs, or nuts.
