Blueberry Sausage Mini Muffins

Blueberry Sausage Mini Muffins: Construction, Variations, and Tips

Ingredients:

  • 2 packages of blueberry muffin mix
  • 1 cup of milk
  • 1 pack of sausage links (cut into thirds)
  • Cooking spray (for muffin pan)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the muffin pan by spraying it with non-stick cooking spray.
  3. In a large bowl, mix the muffin batter according to the instructions on the muffin mix, using the milk instead of the water (if desired, for extra richness).
  4. Cut the sausage links into thirds and gently fold them into the muffin batter.
  5. Spoon the batter into the mini muffin pan, filling each cup about 2/3 full.
  6. Bake for about 10 minutes or until golden brown. If you like a crispier top, switch to broil for the last minute or so, keeping a close eye on them.
  7. Cool slightly before serving, or let them cool completely if you’re freezing them.

Variations:

  • Cheese: Add shredded cheddar cheese or cream cheese to the batter for a creamy, savory twist.
  • Spices: For extra flavor, add a pinch of cinnamon or nutmeg to the muffin batter.
  • Fruit Variations: Use different muffin mixes like banana, cranberry, or apple cinnamon to pair with sausage for different flavor profiles.
  • Vegetarian Option: Swap the sausage for veggie sausage or even cooked, crumbled bacon.
  • Add-ins: You can include additional fruit (like raspberries or strawberries), chopped nuts, or even a touch of maple syrup directly in the batter for added sweetness.

Tips:

  • Consistency: If your muffin batter seems too thick after adding milk, add a splash more milk to achieve the right consistency.
  • Freezing: Once cooled, freeze the muffins in an airtight container or a freezer-safe bag for up to a month. Reheat in the microwave or oven for a quick breakfast.
  • Crispier Top: For a golden, crisp muffin top, lightly spray the tops with cooking spray before baking or during broiling.
  • Mini Muffin Pan: If you prefer larger muffins, use a standard muffin pan and adjust the baking time to about 15-18 minutes.

These make a great grab-and-go breakfast, snack, or even a fun brunch item for family gatherings!
