Ingredients:
- 1.5 lb beef strips (sliced round steaks cut into strips)
- 1 green bell pepper, sliced into thick strips
- 1 red bell pepper, sliced into thick strips
- 1/2 onion, sliced thickly
- 1/4 tsp garlic powder
- 1 1/2 cups beef broth
- 1/4 tsp ground ginger
- 3 tbsp soy sauce
- 1/4 tsp black pepper
- 2 tsp brown sugar
- 1 tbsp cornstarch
Instructions:
- Place the beef, bell peppers, and onions into an electric pressure cooker.
- Add the garlic powder, ground ginger, black pepper, brown sugar, and soy sauce to the mixture.
- Pour the beef broth into the pressure cooker and stir to combine.
- Secure the lid tightly and set the pressure cooker to high for 15 minutes.
- Once cooking is complete, perform a quick release for firmer steak or a natural release for tender, fall-apart meat.
- Remove the lid and press the Cancel button, then switch to Sauté mode.
- In a small bowl, mix 1/4 cup cold water with the cornstarch until smooth. Add this mixture to the pepper steak in the cooker.
- Allow the sauce to boil for 3–5 minutes, stirring occasionally, until it thickens.
