Ingredients
- 380 grams of all-purpose flour
- 260 grams of whole milk
- 70 grams of rapeseed oil
- 60 grams of white sugar
- 5 grams of kosher salt
- 1 medium packet of vanilla sugar
- 1 packet of baker’s yeast
Instructions
Step 1:
Warm the milk in the microwave for 25 seconds. Be careful not to overheat, as it can kill the yeast.
Step 2:
Dissolve the baker’s yeast in the lukewarm milk and let it sit for about 10 minutes.
Step 3:
In a medium mixing bowl, combine the flour, white sugar, kosher salt, and vanilla sugar.
Step 4:
Add the rapeseed oil to the dry ingredients and mix well. Gradually pour in the milk and yeast mixture, stirring until fully incorporated.
Step 5:
Knead the dough until soft and smooth. Cover it with a tea towel and place it in a warm spot to rise until it doubles in size.
Step 6:
Preheat the oven to 180°F (80°C).
Step 7:
Butter a baking mold and line it with parchment paper. On a lightly floured surface, degas the dough by pressing it gently with your fingers. Divide the dough into equal portions, shape into balls, and place them in the mold, leaving a bit of space between each.
Step 8:
Let the dough balls rest for 20 minutes. Brush the tops with milk for a golden finish.
Step 9:
Bake in the preheated oven for 25 minutes, or until the brioche is golden brown.
Tips & Notes:
- For a richer flavor, you can use melted butter instead of rapeseed oil.
- Ensure the milk is lukewarm (not hot) to activate the yeast effectively.
- Resting the dough properly is key to achieving a light and fluffy texture.
