Ingredients
For the Meatloaf:
- 2 pounds ground beef (80/20 recommended)
- 1 cup breadcrumbs (panko or regular)
- 1/2 cup milk
- 2 large eggs
- 1 small onion, finely chopped
- 1 small green bell pepper, finely chopped
- 1 cup shredded provolone or mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
For the Topping:
- 1 small onion, thinly sliced
- 1 small green bell pepper, thinly sliced
- 1 tablespoon butter
- 4 slices provolone cheese
Instructions
- Prepare the Meatloaf Mixture:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground beef, breadcrumbs, milk, eggs, finely chopped onion and bell pepper, shredded cheese, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
- Shape and Bake:
- Transfer the meat mixture to a parchment-lined baking sheet or loaf pan and shape it into a loaf.
- Bake in the preheated oven for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
- Prepare the Topping:
- While the meatloaf bakes, heat the butter in a skillet over medium heat. Sauté the sliced onions and green bell peppers until soft and caramelized, about 8–10 minutes.
- Add the Cheese:
- Once the meatloaf is cooked, remove it from the oven. Lay the provolone cheese slices on top and return it to the oven for 5 minutes, or until the cheese melts.
- Finish with Topping:
- Remove the meatloaf from the oven and top with the sautéed onions and bell peppers.
- Serve:
- Let the meatloaf rest for 5 minutes before slicing. Serve warm with your favorite side dishes.
Variations
- Cheese Variations:
Swap provolone with American cheese, pepper jack, or a combination for added flavor. - Meat Options:
Use a blend of ground beef and ground pork for a richer flavor or substitute with ground turkey for a leaner version. - Stuffed Meatloaf:
Add a layer of cheese or sautéed vegetables in the center of the meatloaf for a surprise filling. - Low-Carb Option:
Replace breadcrumbs with almond flour or crushed pork rinds to make the dish keto-friendly.
Tips
- Don’t Overmix: Overmixing can make the meatloaf dense. Mix just until combined.
- Moisture is Key: Adding milk and eggs ensures a juicy, tender meatloaf.
- Let it Rest: Allow the meatloaf to rest before slicing to keep it intact.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
