  • 2 tbsp butter, melted
  • 1/4 cup (30 g) grated Parmesan cheese (optional)

Construction (How to Make It)

  1. Preheat Oven: Set your oven to 350°F (175°C) and grease a 9×13-inch (23×33 cm) baking dish.
  2. Prepare the Base: In a large mixing bowl, combine cooked chicken, rice, cream of chicken soup, cream of mushroom soup, sour cream, milk, shredded cheddar cheese, frozen peas and carrots (if using), mayonnaise (if using), garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Assemble the Casserole: Spread the mixture evenly into the greased baking dish.
  4. Make the Crunchy Topping: In a small bowl, mix the crushed cornflakes with melted butter and Parmesan cheese (if using). Sprinkle evenly over the casserole.

  6. Serve: Let it rest for 5 minutes before serving. Enjoy!

Variations

  • Protein Options: Swap chicken for turkey, ham, or cooked ground beef.
  • Vegetable Additions: Add bell peppers, broccoli, green beans, or spinach for more nutrients.
  • Cheese Variations: Use mozzarella, Colby Jack, or pepper jack for a different flavor.
  • Crunchy Topping Alternatives: Instead of cornflakes, try crushed Ritz crackers, potato chips, or panko breadcrumbs.
  • Healthier Version: Use Greek yogurt instead of sour cream and mayonnaise, and opt for low-fat cheese and soups.

Tips for the Best Casserole

  • Use Rotisserie Chicken: It adds more flavor and saves time.
  • Prevent a Dry Casserole: Add an extra splash of milk if the mixture seems too thick.
  • Make Ahead: Assemble everything except the topping, cover, and refrigerate for up to 24 hours before baking.
  • Freezing Option: Freeze unbaked casserole for up to 3 months. Thaw overnight and bake as directed.
  • Reheating: Cover with foil and reheat in a 350°F oven for 15–20 minutes to maintain moisture.
