Orange Creamsicle Cake

📋 Ingredients

For the Cake:

  • 1 box (15.25 oz) orange cake mix
  • 1 cup orange soda
  • 1/2 cup vegetable oil
  • 3 large eggs

For the Filling & Topping:

  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1 cup whole milk
  • 1 cup orange juice
  • 1 container (8 oz) whipped topping (e.g., Cool Whip)
  • 1 teaspoon orange zest (optional, for garnish)

Prepare the Cake:

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix the orange cake mix, orange soda, vegetable oil, and eggs until smooth.
  3. Divide the batter evenly between the pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  4. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Make the Filling:

  1. In a medium bowl, whisk together the vanilla pudding mix, milk, and orange juice until thickened.
  2. Refrigerate for 5 minutes to set.

Assemble the Cake:

  1. Place one cake layer on a serving plate and spread half of the pudding mixture on top.
  2. Add the second cake layer and spread the remaining pudding mixture over the top and sides.

Add Toppings & Garnish:

  1. Evenly spread the whipped topping over the cake.
  2. Sprinkle with orange zest for extra flavor and a decorative touch.

Serve & Enjoy:

  • Refrigerate for at least 1 hour before slicing to let the flavors meld.
