Fried Pickle Egg Rolls
Ingredients
- 4 large whole dill pickles
- 8 egg roll wrappers
- 200 g (7 oz) cream cheese, softened
- ½ cup shredded cheddar cheese
- 4–6 strips cooked bacon, crumbled (optional but tasty)
- 1 egg (for sealing wrappers)
- Oil for frying
Optional dipping sauce: ranch or garlic mayo.
Instructions
1. Prepare the pickles
- Drain pickles and pat them very dry with paper towels (important so oil doesn’t splatter).
2. Make the filling
- Mix cream cheese, cheddar cheese, and bacon in a bowl until smooth.
3. Stuff the pickles
- Cut each pickle lengthwise halfway (don’t cut all the way through).
- Fill the center with the cream cheese mixture.
4. Wrap
- Place a stuffed pickle on an egg roll wrapper.
- Roll tightly like a burrito, folding in the sides.
- Seal edges with beaten egg.
5. Fry
- Heat oil to about 175°C (350°F).
- Fry 2–3 minutes until golden brown and crispy.
- Remove and drain on paper towels.
6. Serve
- Let cool slightly, slice, and serve with ranch or your favorite dip.
