Garlic Butter Steak Bites
Ingredients
1½ lbs (700 g) sirloin steak (or ribeye), cut into 1-inch cubes
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika (optional)
1 tablespoon olive oil
4 tablespoons (60 g) unsalted butter
4 cloves garlic, minced
1 tablespoon fresh parsley, chopped
Instructions
Prep the Steak
Pat steak cubes dry with paper towels (very important for a good sear).
Season with salt, pepper, and paprika.
Sear the Steak
Heat a large skillet (preferably cast iron) over high heat.
Add olive oil.
Place steak pieces in a single layer (do not overcrowd).
Sear 1–2 minutes per side until browned.
Remove from pan and set aside.
(Cook in batches if needed.)
Make Garlic Butter
Reduce heat to medium.
Add butter to the same pan.
Once melted, add minced garlic.
Cook 30–45 seconds until fragrant (don’t burn it).
Combine
Return steak bites to the pan.
Toss in garlic butter for 1 minute.
Sprinkle with fresh parsley.

Pro Tips
High heat = better crust
Don’t move steak too much while searing
Let steak rest 5 minutes before serving
