Ingredients
Chicken Fried Steak
4 cube steaks
1 cup all-purpose flour
2 eggs
1 cup buttermilk
1 tsp salt
1 tsp black pepper
1 tsp paprika
Oil for frying
Mashed Potatoes
2 lb potatoes, peeled and cubed
4 tbsp butter
1/2 cup milk or cream
Salt and black pepper
Cream Gravy
1/4 cup pan drippings or butter
1/4 cup all-purpose flour
2 cups milk
Salt and black pepper
Mac and Cheese
2 cups elbow macaroni
2 tbsp butter
2 tbsp flour
2 cups milk
2 cups shredded cheddar cheese
Salt and black pepper
Instructions
Pound the cube steaks if needed. Mix flour with salt, pepper, and paprika in a shallow bowl. Whisk eggs and buttermilk in another bowl. Dip each steak in the flour, then the egg mixture, then back into the flour, pressing to coat well. Fry in hot oil until golden brown and cooked through. Set aside.
Boil the potatoes in salted water until tender. Drain, add butter and milk, and mash until smooth. Season with salt and pepper.
For the gravy, heat the drippings or butter in a pan. Whisk in flour and cook until lightly golden. Slowly add milk while whisking until thick and smooth. Season with salt and plenty of black pepper.
Cook macaroni according to package directions and drain. In a saucepan melt butter, whisk in flour, and cook for a minute. Add milk gradually, stirring until thickened. Stir in cheddar until melted and smooth. Season with salt and pepper, then fold in the pasta.
Serve the crispy steak covered in cream gravy with mashed potatoes and a side of mac and cheese.
