Creamy Garlic Butter Tuscan Mushrooms
Rich, creamy, and packed with garlic, herbs, and sun-dried tomatoes — this Tuscan-style mushroom dish is perfect as a side or served over pasta, rice, or toast.
Ingredients (Serves 4)
1 lb (450 g) mushrooms (cremini or button), cleaned
2 tablespoons butter
1 tablespoon olive oil
4 cloves garlic, minced
½ small onion, finely chopped
½ cup sun-dried tomatoes (in oil, drained & sliced)
1 cup heavy cream
½ cup grated Parmesan cheese
1 teaspoon Italian seasoning
½ teaspoon paprika (optional)
Salt and black pepper to taste
1 cup fresh spinach
1 tablespoon chopped fresh parsley (for garnish)
Instructions
Sauté the Mushrooms
Heat butter and olive oil in a large skillet over medium heat.
Add mushrooms in a single layer.
Cook 5–7 minutes until golden and tender.
Remove and set aside if your pan gets crowded.
Build the Flavor
In the same skillet, add onion and cook 2–3 minutes until soft.
Stir in garlic and cook 30 seconds (do not brown).
Add sun-dried tomatoes and cook 1 minute.
Make the Cream Sauce
Pour in heavy cream.
Add Italian seasoning, paprika, salt, and pepper.
Simmer 3–5 minutes until slightly thickened.
Stir in Parmesan until melted and smooth.
Finish the Dish
Return mushrooms to the skillet.
Add fresh spinach and cook until wilted (about 1–2 minutes).
Simmer another 2–3 minutes until everything is coated in sauce.
Garnish & Serve
Sprinkle with fresh parsley.
Serve hot.
