Cheesy Burrata Crostini with Prosciutto & Peaches
**Ingredients (Serves 4-6):
- 1 sourdough bread or sliced French baguette
- ⅓ cup grated parmesan
- ⅓ cup grated pecorino cheese
- 1 grated garlic clove
- 2 tbsp fresh thyme leaves
- 2 tbsp melted butter
- 4 oz prosciutto (or ham)
- 8 oz burrata cheese (room temperature)
- 2 ripe peaches, thinly sliced
- Hot honey (for drizzling)
- Fresh basil leaves
**Directions:
- Preheat the oven to 375°F (190°C).
- Brush the bread slices with melted butter, then sprinkle with grated parmesan, pecorino, and garlic. Add fresh thyme leaves on top.
- Place the bread on a baking sheet and toast for 5-7 minutes, until crispy and golden.
- While the bread is toasting, slice the prosciutto and peaches.
- Once the crostini are ready, spread burrata cheese on top of each toast.
- Layer with prosciutto and top with thin peach slices.
- Drizzle with hot honey and garnish with fresh basil.
- Serve immediately and enjoy!
