Banana Bread Cookies Recipe
Ingredients:
- 1 ripe banana
- ½ cup granulated sugar
- ¼ cup melted butter
- 1 cup all-purpose flour
- ¼ teaspoon baking soda
- ¼ teaspoon salt
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- Mash the Banana: In a medium bowl, mash the ripe banana with a fork until smooth. Leave a few chunks if you prefer some texture in your cookies.
- Mix Wet Ingredients: Add the melted butter and granulated sugar to the mashed banana. Stir until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix.
- Form the Cookies: Scoop spoonfuls of dough and place them on the prepared baking sheet, leaving a little space between each cookie.
- Bake: Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
- Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Variations:
- Chocolate Chip Banana Bread Cookies: Add ½ cup of chocolate chips to the dough for a delicious twist.
- Nutty Banana Bread Cookies: Add ¼ cup of chopped walnuts, pecans, or almonds for a crunchy texture.
- Spiced Banana Bread Cookies: Add ¼ teaspoon of cinnamon, nutmeg, or pumpkin pie spice to the dry ingredients for extra flavor.
- Oatmeal Banana Bread Cookies: Stir in ¼ cup of rolled oats to the dough for a heartier texture.
- Banana Bread Cookies with Coconut: Add ¼ cup of shredded coconut to the dough for a tropical twist.
Tips:
- Ripeness of Banana: The riper the banana, the sweeter and more flavorful your cookies will be. Use bananas with brown spots for the best results.
- Chill the Dough: If you want thicker cookies, chill the dough for 30 minutes before baking.
- Don’t Overmix: Mix the dough just until the dry ingredients are incorporated to avoid dense cookies.
- Make them Soft or Crisp: For softer cookies, take them out of the oven as soon as they are golden on the edges. If you want them crispier, let them bake for an extra minute or two.
- Storage: Store the cookies in an airtight container at room temperature for up to 3 days, or refrigerate them for longer shelf life.
