Instructions

1. Prepare the Cabbage Mixture

  1. In a large mixing bowl, combine the shredded cabbage, chopped onion, spring onion, and parsley.
  2. Crack in the eggs and mix well to coat the vegetables evenly.

2. Add Dry Ingredients

  1. Sprinkle in the flour, black pepper, and salt.
  2. Mix until a thick, cohesive batter forms. Adjust the flour if the mixture is too runny.

3. Shape the Fritters

  • Scoop small portions of the mixture (around 2 tablespoons) and gently flatten them into patties.

4. Fry the Fritters

  1. Heat a thin layer of cooking oil in a skillet over medium heat.
  2. Place the fritters into the hot oil, ensuring they are spaced out to avoid sticking.
  3. Fry for 3–4 minutes on each side, or until golden brown and crispy.
  4. Remove and place on paper towels to absorb excess oil.

5. Serve

  • Serve warm as a snack, appetizer, or side dish, paired with yogurt, sour cream, or a dipping sauce of your choice.

Variations

  1. Cheesy Twist
    • Add grated cheese (cheddar, mozzarella, or Parmesan) to the batter for a richer flavor.
  2. Spicy Option
    • Incorporate chili flakes, chopped jalapeños, or paprika for a spicy kick.
  3. Gluten-Free
    • Replace regular flour with chickpea flour, rice flour, or almond flour for a gluten-free version.
  4. Protein Boost
    • Add cooked shredded chicken, minced meat, or canned tuna to the batter for extra protein.
  5. Vegetable Medley
    • Mix in grated carrots, zucchini, or finely chopped bell peppers for added color and flavor.
  6. Herb Variations
    • Substitute parsley with dill, cilantro, or chives to experiment with different herb profiles.

Tips for Success

  • Shredding Cabbage: Use a sharp knife or food processor for even shredding.
  • Binding the Mixture: If the batter feels too loose, add a little more flour or an extra egg.
  • Frying Temperature: Keep the oil medium-hot to cook the fritters evenly without burning.
  • Batch Cooking: Fry in batches to avoid overcrowding the pan, which can lower the oil temperature.
  • Serving Suggestions: Pair with a simple salad, tzatziki, or sweet chili sauce for a complete meal.

Enjoy your crispy, golden cabbage and egg fritters!
