Cabbage and Minced Meat

Ingredients:

  • 1 small cabbage, chopped into bite-sized pieces
  • 1 pound ground beef
  • 1 (15 oz) can diced tomatoes
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp powdered broth seasoning
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1/2 tsp smoked paprika
  • Salt to taste

Instructions:

  1. Heat a large skillet over medium heat and brown the ground beef, breaking it into small pieces as it cooks. Drain any excess grease if necessary.
  2. Add the chopped onion and garlic to the skillet. Cook until softened and fragrant, about 3-4 minutes.
  3. Stir in the powdered broth seasoning, cumin, cayenne pepper, smoked paprika, and salt. Mix well to coat the beef and onion mixture evenly with the spices.
  4. Add the chopped cabbage to the skillet and cook, stirring occasionally, until it begins to soften.
  5. Pour in the diced tomatoes with their juices and stir to combine. Cover the skillet and simmer for 10-15 minutes, or until the cabbage is tender and the flavors meld together.
  6. Adjust seasonings as needed and serve hot.

Tips and Variations:

  • Vegetarian Option: Replace ground beef with crumbled tofu or cooked lentils for a plant-based version.
  • Add Vegetables: Include diced bell peppers, carrots, or zucchini for extra nutrients and color.
  • Make it Cheesy: Top with shredded cheese before serving for a creamy, indulgent touch.
  • Spice it Up: Add more cayenne or a splash of hot sauce for a spicier dish.
  • Serve with Sides: Pair with rice, quinoa, or mashed potatoes for a hearty meal.

This simple and flavorful dish is perfect for busy weeknights and easy to customize to your liking!
