Cajun Grilled Chicken with Alabama White Sauce

Ingredients

For the Cajun Grilled Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder

For the Alabama White Sauce:

  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Cajun Grilled Chicken:
    • Preheat the grill to medium-high (about 400°F or 200°C).
    • Combine Cajun seasoning, smoked paprika, garlic powder, onion powder, cayenne, salt, and pepper in a small bowl.
    • Rub olive oil over the chicken breasts, then coat them evenly with the spice mixture.
    • Squeeze lemon juice over the seasoned chicken and let it marinate for 10-15 minutes.
  2. Grill the Chicken:
    • Place the chicken on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
    • Remove from the grill and allow the chicken to rest for a few minutes.
  3. Prepare the Alabama White Sauce:
    • In a small bowl, mix mayonnaise, apple cider vinegar, Dijon mustard, lemon juice, garlic powder, onion powder, cayenne, salt, and pepper.
    • Whisk until smooth and adjust the seasoning if needed.
    • For best results, refrigerate the sauce for 15-20 minutes to let the flavors develop.
  4. Serve:
    • Drizzle the Alabama white sauce over the grilled chicken or serve it as a dipping sauce on the side.
    • Garnish with fresh parsley if desired.
