Chocolate-Covered Peanut Butter Balls

Ingredients

  • 1 cup peanut butter (smooth or chunky)
  • 1/2 cup powdered sugar (adjust to taste for less sweetness)
  • 1/2 cup graham cracker crumbs (or oats for a healthier alternative)
  • 1 tsp vanilla extract
  • 1 cup chocolate chips (dark chocolate is great for a less sweet option)

Instructions

  1. Make the Peanut Butter Mixture
    • In a large mixing bowl, combine peanut butter, powdered sugar, graham cracker crumbs, and vanilla extract. Stir until the mixture is smooth and evenly combined.
  2. Shape the Balls
    • Roll the mixture into small balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet.
  3. Freeze
    • Transfer the tray to the freezer and let the balls firm up for about 30 minutes.
  4. Melt the Chocolate
    • While the balls are freezing, melt the chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring after each, until the chocolate is completely melted and smooth.
  5. Dip in Chocolate
    • Once the peanut butter balls are firm, use a fork or toothpick to dip each ball into the melted chocolate. Ensure they’re fully coated, then return them to the parchment-lined tray.
  6. Set the Coating
    • Chill the chocolate-coated balls in the refrigerator until the chocolate hardens.
  7. Enjoy and Store
    • Once set, the peanut butter balls are ready to eat! Store them in an airtight container in the fridge for up to a week.
