Fruit Trifle Recipe

This fruit trifle is a vibrant, layered dessert combining fresh fruit, sponge cake, creamy custard, and whipped cream for a show-stopping treat.

Ingredients

For the Layers:

  • 1 pound (450g) mixed fresh fruit (strawberries, blueberries, raspberries, pineapple, kiwi, mango, etc.)
  • 1 package (14 oz) sponge cake or ladyfingers (store-bought or homemade)
  • 1 cup fruit juice (orange juice, apple juice, or a light syrup for soaking the cake)

For the Custard Layer:

  • 2 cups whole milk
  • 1/2 cup sugar
  • 3 large egg yolks
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the Whipped Cream Layer:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

How to Make It

Step 1: Prepare the Custard

  1. Heat the milk in a saucepan over medium heat until warm (but not boiling).
  2. In a bowl, whisk together the sugar, egg yolks, cornstarch, vanilla extract, and salt until smooth.
  3. Gradually pour the warm milk into the egg mixture, whisking continuously.
  4. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
  5. Remove from heat, transfer to a bowl, and let it cool to room temperature. Cover with plastic wrap to prevent a skin from forming.

Step 2: Prepare the Whipped Cream

  1. In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Refrigerate until ready to use.

Step 3: Assemble the Trifle

  1. Slice the sponge cake or ladyfingers into pieces and layer them at the bottom of a large trifle bowl or individual serving glasses.
  2. Drizzle fruit juice evenly over the cake to moisten it.
  3. Add a layer of the mixed fresh fruit on top of the cake.
  4. Spread a layer of the cooled custard over the fruit.
  5. Repeat the layers (cake, fruit, custard) until the bowl is full, ending with a layer of whipped cream on top.

Step 4: Garnish and Serve

  1. Decorate with additional fresh fruit or a sprinkle of toasted nuts, coconut, or grated chocolate.
  2. Refrigerate for at least 2 hours to allow the flavors to meld. Serve chilled.

Variations

  1. Flavor Twists:
    • Add a splash of liqueur (such as Grand Marnier or Amaretto) to the fruit juice for an adult version.
    • Use flavored custard (e.g., chocolate or lemon) for a unique twist.
  2. Fruit Choices:
    • Swap the fresh fruit for canned or frozen options in off-seasons.
    • Incorporate seasonal fruits like peaches in summer or pomegranate seeds in winter.
  3. Cake Alternatives:
    • Use pound cake, angel food cake, or even chocolate cake for a richer flavor.
  4. Dietary Modifications:
    • Make it dairy-free by using plant-based milk and cream alternatives.
    • Opt for a gluten-free cake to suit dietary needs.

Tips

  • Fruit Prep: Pat the fruit dry to avoid excess moisture that could make the trifle soggy.
  • Custard Shortcut: Use instant vanilla pudding for a quicker alternative.
  • Make-Ahead: Assemble the trifle a day ahead to let the flavors meld, but add whipped cream just before serving.
  • Serving: Use clear glass bowls to showcase the beautiful layers.

This trifle is perfect for celebrations, potlucks, or as a light and refreshing dessert after a hearty meal!
