GARLIC BUTTER LOBSTER AND SCALLOPS

Ingredients

For Lobster Tails & Garlic Butter

  • 20 oz (2) lobster tails
  • ½ cup butter
  • 3 tbsp olive oil
  • 2 heads garlic
  • ½ tsp salt
  • 1 onion
  • Fresh parsley for garnish

For Scallops & Lemon Orzo

  • 8 scallops
  • 2 tbsp garlic butter
  • 1 cup orzo
  • 1 cup seafood stock
  • ½ cup white wine
  • 4 tbsp Parmesan cheese
  • 4 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

1. Roast Garlic and Onion

  • Preheat the oven to 400°F.
  • Trim ½ inch from the top of each garlic head to expose the cloves. Remove loose skin, drizzle with 1 tbsp olive oil each, and wrap in foil.
  • Cut the onion into wedges (keeping the base intact) and wrap in foil with a drizzle of olive oil.
  • Place both on a baking sheet and roast for 40 minutes to 1 hour, until the garlic is soft and browned, and the onion is tender and translucent.

2. Prepare Garlic Butter

  • Allow butter to soften while the garlic and onion roast.
  • Squeeze roasted garlic cloves into the softened butter, mash with salt, and mix until smooth.

3. Sear the Scallops

  • Melt 2 tbsp garlic butter in a skillet over medium heat.
  • Sear scallops for 1–2 minutes per side until golden brown. Remove and set aside.

4. Cook Lemon Orzo

  • Deglaze the skillet with white wine, scraping up browned bits.
  • Add orzo and seafood stock; simmer for 9 minutes until al dente.

5. Bake Lobster Tails

  • Split the top of each lobster shell with scissors and lift the meat to rest on top.
  • Place on a baking sheet and bake for 10–12 minutes until the shells are bright red and the meat is opaque. Avoid overcooking.

6. Finish Orzo

  • Stir lemon juice into the orzo, then add cooked scallops, Parmesan, and parsley. Season with salt and pepper.

7. Serve

  • Plate lobster tails atop the lemon orzo and scallops. Arrange roasted onion alongside. Serve with melted garlic butter and lemon wedges.
