A delicious twist on cheeseburgers, combining juicy beef, cheese, and biscuit mix into flavorful, bite-sized treats. Perfect for parties or quick snacks!

Ingredients

For the Cheeseburger Bites:

  • Red Lobster biscuit mix: 1 box (includes garlic butter packet)
  • Ground beef: 1 pound (uncooked)
  • Shredded cheddar or Colby Jack cheese: 16 ounces

For the Garlic Butter:

  • Garlic butter packet: Included with the biscuit mix
  • Butter: As directed on the packet

For the Big Mac Sauce (optional):

  • Mayonnaise: 1 cup
  • Mustard: 1 tablespoon
  • White vinegar or pickle juice: 1 teaspoon
  • Sweet relish: 3 tablespoons
  • Garlic powder: ½ teaspoon
  • Onion powder: ½ teaspoon
  • Paprika: ½ teaspoon

Construction

  1. Prepare the dough: In a large bowl, mix 1 box of Red Lobster biscuit mix with 1 pound of uncooked ground beef. This may take a bit of effort to combine fully.
  2. Add cheese: Once the mix is well combined, fold in 16 ounces of shredded cheese until evenly distributed.
  3. Form balls: Shape the mixture into 1½-2 inch balls. Place them on a parchment-lined baking sheet, leaving some space between each.
  4. Bake: Preheat the oven to 350°F (175°C). Bake the bites for 25-30 minutes, or until they are cooked through and golden brown.
  5. Drain: Remove from the oven and let the bites rest on paper towels to drain excess grease.
  6. Garlic butter topping: Prepare the garlic butter mixture according to the packet instructions and brush over the baked cheeseburger bites.
  7. Serve: Enjoy warm, either on their own or with the Big Mac sauce or your favorite dipping sauce.

Variations

  1. Spicy version: Add diced jalapeños or a pinch of cayenne pepper to the mixture.
  2. Bacon lovers: Mix in cooked, crumbled bacon for an extra layer of flavor.
  3. Stuffed bites: Insert a cube of mozzarella or cream cheese in the center of each ball before baking.
  4. Vegetarian option: Use plant-based ground meat and a vegan biscuit mix for a meat-free alternative.
  5. Seasoned bites: Add a dash of Worcestershire sauce, onion powder, or smoked paprika for more depth.

Tips

  • Mix thoroughly: It takes time to combine the biscuit mix and beef; knead well for the best consistency.
  • Use a scoop: A cookie scoop ensures uniform ball sizes for even baking.
  • Check doneness: Use a meat thermometer to ensure the bites reach an internal temperature of 160°F (71°C).
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or air fryer for crispy results.
  • Make ahead: Prepare and freeze the uncooked bites on a tray, then transfer to a freezer bag. Bake from frozen, adding a few extra minutes to the cooking time.

Enjoy these Garlic Cheeseburger Bites—a crowd-pleasing treat that’s bursting with cheesy, garlicky goodness!
