Homemade Kentucky Blackberry Cobbler
Ingredients
- 4 cups fresh blackberries (or frozen, thawed, and drained)
- 1 cup granulated sugar (adjust to taste)
- 1 cup all-purpose flour
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 stick (1/2 cup) unsalted butter, melted
- Optional: Vanilla ice cream or whipped cream for serving
Instructions
1. Preheat the Oven
Set your oven to 350°F (175°C).
2. Prepare the Blackberries
In a bowl, combine the blackberries with 1/2 cup of sugar (adjust based on your preference). Let them sit for 10 minutes to release their natural juices.
3. Make the Batter
In another bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt. Gradually mix in the milk and vanilla extract until smooth.
4. Assemble the Cobbler
Pour the melted butter into the bottom of a 9×9-inch baking dish. Gently pour the batter over the butter without stirring. Evenly spoon the blackberries and their juices over the batter.
5. Bake
Place the dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
6. Cool and Serve
Allow the cobbler to cool slightly before serving. For a delightful finishing touch, top with a scoop of vanilla ice cream or a dollop of whipped cream.
This easy, classic Kentucky blackberry cobbler is warm, comforting, and bursting with flavor. For a creative twist, try adding spices like cinnamon or nutmeg, or sprinkle a crumble topping over the berries. Enjoy!
