Ingredients
For the Meatloaf:
- 2 pounds of ground beef (85% lean)
- 1 cup of breadcrumbs
- 1/2 cup of milk
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 2 large eggs
- 1 tablespoon of Worcestershire sauce
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 teaspoon of dried thyme
- 1/2 cup of ketchup
- 2 tablespoons of brown sugar
For the Mashed Potatoes:
- 2 pounds of potatoes, peeled and chopped
- 1/2 cup of milk
- 1/4 cup of unsalted butter
- Salt and pepper to taste
For the Topping:
- 1 1/2 cups of grated cheddar cheese
- Fresh parsley, chopped (for garnish)
Directions
- Prepare the Meatloaf:
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the ground beef, breadcrumbs, milk, onion, garlic, eggs, Worcestershire sauce, salt, pepper, and thyme. Mix until well incorporated.
- Transfer the mixture to the prepared loaf pan, shaping it into a loaf.
- In a small bowl, mix the ketchup and brown sugar, then spread the mixture evenly over the top of the meatloaf.
- Bake for 60-70 minutes, or until the internal temperature reaches 160°F (70°C). Let the meatloaf rest for 10 minutes before slicing.
- Prepare the Mashed Potatoes:
- While the meatloaf is baking, boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add the milk, butter, salt, and pepper, then mash until smooth and creamy. Set aside.
- Add the Topping:
- Once the meatloaf is baked, sprinkle the grated cheddar cheese on top. Return it to the oven for 5-7 minutes, or until the cheese is melted and bubbly.
