Meat and Potato Casserole

This Meat and Potato Casserole is a cherished recipe my grandmother used to keep my picky cousins and me happily fed. It’s kid-friendly and equally loved by adults!

Life can get hectic, and sometimes putting dinner on the table feels like a real challenge. One day you have time to plan meals, and the next you’re scrambling to figure out what to cook.

This Meat and Potato Casserole is the perfect solution! It’s quick, easy, and absolutely delicious—a go-to for busy weeknights.


Ingredients (Serves 8):

  • 1 lb ground beef
  • 1 tsp dried rosemary
  • 1 tsp garlic powder
  • 1 onion, chopped
  • 1/4 cup heavy whipping cream
  • 1/2 cup beef broth
  • 1 can cream of mushroom soup
  • 5 potatoes, peeled and thinly sliced
  • 1 1/2 cups shredded cheese
  • Salt and pepper to taste

Instructions:

  1. Prepare the Oven: Preheat to 350°F and grease a 9×13-inch baking dish.
  2. Cook the Meat: In a skillet over medium-high heat, cook the ground beef and onion until the meat is browned and the onion is tender. Drain any excess fat.
  3. Make the Sauce: In a bowl, mix the heavy whipping cream, beef broth, rosemary, garlic powder, cream of mushroom soup, and salt and pepper to taste. Stir until well combined.
  4. Layer the Casserole:
    • Layer half of the sliced potatoes at the bottom of the baking dish.
    • Spread 1/3 of the sauce over the potatoes and top with half of the cooked meat mixture.
    • Repeat the layering with the remaining potatoes, another 1/3 of the sauce, and the rest of the meat mixture.
    • Finish by spreading the remaining sauce on top and sprinkling with shredded cheese.
  5. Bake: Cover the dish with foil and bake for 1 hour and 30 minutes, or until the potatoes are tender.
  6. Serve and Enjoy: Let the casserole cool slightly, then serve and enjoy this comforting dish!
