Mozzarella Stuffed Rosemary Parmesan Soft Pretzels

Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 cup warm water (110°F)
  • 2 tbsp unsalted butter, melted
  • 1 tbsp fresh rosemary, chopped
  • ½ cup grated Parmesan cheese
  • 1 cup mozzarella cheese, shredded
  • 1 egg (for egg wash)

Construction:

  1. Activate the Yeast:
    • In a bowl, mix warm water, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
  2. Make the Dough:
    • In a large mixing bowl, combine flour, salt, rosemary, and Parmesan cheese.
    • Add the yeast mixture and melted butter. Mix until a dough forms.
    • Knead for 5–7 minutes until smooth and elastic.
  3. Let the Dough Rise:
    • Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
  4. Divide and Shape:
    • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • Punch down the dough and divide it into 8 equal portions.
    • Roll each piece into a rope, flatten it slightly, and place some shredded mozzarella in the center.
    • Pinch the edges tightly to seal the cheese inside and form a pretzel shape.
  5. Boil the Pretzels:
    • Bring a large pot of water to a boil and add 1 tbsp baking soda.
    • Boil each pretzel for 20–30 seconds, then transfer to the prepared baking sheet.
  6. Bake the Pretzels:
    • Brush each pretzel with beaten egg.
    • Sprinkle extra Parmesan and rosemary on top.
    • Bake for 12–15 minutes or until golden brown.
  7. Cool and Serve:
    • Let them cool slightly before enjoying the gooey, cheesy goodness!

  • Garlic Butter Twist: Brush with garlic butter after baking for extra flavor.
  • Spicy Kick: Add crushed red pepper flakes to the dough or sprinkle on top.
  • Whole Wheat Version: Substitute half of the all-purpose flour with whole wheat flour.

  • Stuffed with More: Add cooked bacon bits or caramelized onions inside.
