Ingredients:
- 2 ½ cups all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 1 packet (2 ¼ tsp) active dry yeast
- 1 cup warm water (110°F)
- 2 tbsp unsalted butter, melted
- 1 tbsp fresh rosemary, chopped
- ½ cup grated Parmesan cheese
- 1 cup mozzarella cheese, shredded
- 1 egg (for egg wash)
Construction:
- Activate the Yeast:
- In a bowl, mix warm water, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
- Make the Dough:
- In a large mixing bowl, combine flour, salt, rosemary, and Parmesan cheese.
- Add the yeast mixture and melted butter. Mix until a dough forms.
- Knead for 5–7 minutes until smooth and elastic.
- Let the Dough Rise:
- Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
- Divide and Shape:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Punch down the dough and divide it into 8 equal portions.
- Roll each piece into a rope, flatten it slightly, and place some shredded mozzarella in the center.
- Pinch the edges tightly to seal the cheese inside and form a pretzel shape.
- Boil the Pretzels:
- Bring a large pot of water to a boil and add 1 tbsp baking soda.
- Boil each pretzel for 20–30 seconds, then transfer to the prepared baking sheet.
- Bake the Pretzels:
- Brush each pretzel with beaten egg.
- Sprinkle extra Parmesan and rosemary on top.
- Bake for 12–15 minutes or until golden brown.
- Cool and Serve:
- Let them cool slightly before enjoying the gooey, cheesy goodness!
Variations:
- Garlic Butter Twist: Brush with garlic butter after baking for extra flavor.
- Spicy Kick: Add crushed red pepper flakes to the dough or sprinkle on top.
- Whole Wheat Version: Substitute half of the all-purpose flour with whole wheat flour.
- Different Cheeses: Try cheddar, gouda, or pepper jack instead of mozzarella.
- Stuffed with More: Add cooked bacon bits or caramelized onions inside.
Tips:
- Seal the Cheese Well: Ensure the edges are pinched tightly to prevent leaks.
- Don’t Skip the Boiling Step: This gives the pretzels their signature chewy texture.
- Use Fresh Rosemary: Fresh herbs enhance the flavor better than dried ones.
- Serve with Dips: Marinara sauce, honey mustard, or cheese sauce make great accompaniments.
- Reheat for Best Texture: If storing leftovers, warm them in an oven for a fresh-baked feel.
