Pickled Eggs, Sausage & Onions

A tangy, flavorful snack that’s easy to make and perfect for enjoying as a protein-packed treat or appetizer!


Ingredients:

6 hard-boiled eggs, peeled
1 lb sausage (kielbasa, smoked sausage, or your favorite), sliced
1 onion, thinly sliced
1 cup white vinegar
1 cup water
¼ cup sugar
1 tbsp salt
1 tsp black peppercorns
1 tsp mustard seeds
1 tsp red pepper flakes (optional, for heat)


Instructions:

1️⃣ Prepare the Pickling Liquid

🥣 In a medium saucepan, combine vinegar, water, sugar, salt, black peppercorns, mustard seeds, and red pepper flakes (if using).
🔥 Bring to a boil, then reduce heat and simmer for 5 minutes to blend the flavors.

2️⃣ Assemble the Jar

🥚 Place peeled eggs, sliced sausage, and onions into a clean glass jar or container.
🫙 Carefully pour the hot pickling liquid over everything, ensuring it is fully submerged.
⏳ Let cool to room temperature, then cover and refrigerate for at least 24 hours (best after 3–5 days!).

🌶 Spicy Kick – Add sliced jalapeños or extra red pepper flakes.
🟡 Dill-Infused – Toss in fresh dill or dill seeds for a pickle-like twist.
🍺 Beer Brine – Replace ½ cup water with beer for a unique flavor.

Tips for Perfect Pickled Eggs & Sausage:

For deeper flavor, let the jar sit in the fridge for at least 3 days before eating.
Use a glass jar – Plastic can absorb strong vinegar flavors.
Softer onions? Blanch them in boiling water for 30 seconds before pickling.
