Slow Cooker Potatoes

Slow Cooker Potatoes: Ingredients, Construction, Variations, and Tips

Ingredients:

  • 6 large potatoes, thinly sliced
  • 1 packet of Lipton Onion Soup mix
  • 1/3 cup butter, melted
  • 1 cup shredded cheddar cheese (optional)
  • 1/2 cup chicken broth or water
  • Salt and pepper to taste
  • Cooking spray or butter for greasing

Construction:

  1. Prepare the Slow Cooker: Grease the inside of the slow cooker with butter or cooking spray to prevent sticking.
  2. Prep the Potatoes: Wash and peel the potatoes (if desired), then slice them evenly for uniform cooking.
  3. Season the Potatoes: In a large mixing bowl, toss the potato slices with melted butter. Sprinkle the Lipton Onion Soup mix over them and mix well.
  4. Add Cheese (Optional): If using cheddar, mix it in with the potatoes.
  5. Layer in the Slow Cooker: Spread the seasoned potatoes in an even layer inside the slow cooker.
  6. Add Liquid: Pour the chicken broth or water over the potatoes to help them cook evenly.
  7. Cook: Cover and cook on low for 5-6 hours or high for 2-3 hours until the potatoes are tender.
  8. Season and Serve: Taste and adjust seasoning with salt and pepper before serving.

Variations:

  • Creamier Version: Add 1/2 cup of sour cream or heavy cream before cooking for a richer texture.
  • Garlic & Herb: Add minced garlic and fresh or dried herbs like rosemary or thyme for extra flavor.
  • Bacon & Cheese: Mix in cooked, crumbled bacon and use a blend of cheeses like cheddar and mozzarella.
  • Spicy Kick: Sprinkle in red pepper flakes or add diced jalapeños.
  • Loaded Potatoes: Top with green onions, sour cream, and extra cheese just before serving.
  • Vegan Option: Use olive oil or plant-based butter and swap the cheese for a dairy-free alternative.

Tips for Success:

  • Slice Evenly: Thinner, even slices cook more uniformly. A mandoline slicer can help.
  • Prevent Dryness: If the potatoes seem dry while cooking, add an extra splash of broth or water.
  • Crispier Top: For a crispy cheese layer, transfer the cooked potatoes to a baking dish, sprinkle more cheese on top, and broil for a few minutes.
  • Stir Carefully: If stirring during cooking, do so gently to avoid breaking the potatoes.
  • Use Russet or Yukon Gold Potatoes: These varieties hold up best in slow cooking.
