Spinach and Green Onion Pan Flatbread

Materials Required:

  1. Warm Water (300ml / 1 ½ cups): Warm water is essential to activate the yeast and bind the dough, resulting in soft, easy-to-handle flatbread. Ensure the water is at the ideal temperature—not too hot or cold—to create light, airy bread and allow the yeast to work effectively.
  2. Salt (7g / 1 tsp): Salt is a vital ingredient that enhances the dough’s flavor, adds texture, balances sweetness, and strengthens the gluten structure. Used sparingly, it regulates yeast activity, leading to a perfectly balanced flatbread.
  3. Egg (1): Incorporating an egg enriches the dough, adding moisture, creaminess, and a soft, savory crumb. Lightly beaten, it contributes to the bread’s silky texture and golden color.
  4. Flour (550g / 4.5 cups): A mix of all-purpose and whole wheat flour provides the structure and texture necessary for the dough to rise and achieve a chewy consistency with a balanced flavor.
  5. Spinach (50g, chopped) and Green Onions (40g, chopped): These vibrant greens add a fresh, mild sweetness and a burst of flavor. When finely chopped and incorporated, they enhance the flatbread’s aroma and taste, creating a unique dining experience.
  6. Salt and Red Pepper (½ tsp each): A pinch of salt and a dash of red pepper elevate the flavor, adding mild spice and complementing the dough’s natural sweetness and the freshness of the greens.
  7. Butter (100g): Butter gives the flatbread a rich, golden crust and adds a decadent finish when spread over the cooked bread, enhancing its flavor.

Preparation Steps:

  1. In a large bowl, whisk together the egg, salt, and lukewarm water until well combined.
  2. Gradually add the flour to the wet mixture, stirring continuously with a wooden spoon, until a soft dough forms.
  3. Transfer the dough to a floured surface and knead for 5–7 minutes until smooth and elastic.
  4. Place the dough back in the bowl, cover with a clean kitchen towel, and let it rest for 30–60 minutes to ferment and develop flavor.
  5. Divide the rested dough into two portions and roll each into a ball. Flatten each ball into a disk about ¼ inch thick.
  6. Heat a skillet over medium heat and melt a tablespoon of butter. Cook the flattened dough circles for 2–3 minutes on each side until golden and fully cooked.
  7. While cooking the flatbreads, prepare the filling:
    • In a separate skillet, melt butter over medium heat.
    • Add the chopped spinach and green onions, seasoning with salt and red pepper.
    • Sauté for 3–4 minutes until the vegetables are tender and aromatic.
  8. Once the flatbreads are cooked, place them on a serving plate. Spoon the sautéed spinach and green onion mixture evenly over the flatbreads.
