Ingredients

For the Meatloaf:

  • 2 pounds ground beef (80/20 recommended)
  • 1 cup breadcrumbs (panko or regular)
  • 1/2 cup milk
  • 2 large eggs
  • 1 small onion, finely chopped
  • 1 small green bell pepper, finely chopped
  • 1 cup shredded provolone or mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

For the Topping:

  • 1 small onion, thinly sliced
  • 1 small green bell pepper, thinly sliced
  • 1 tablespoon butter
  • 4 slices provolone cheese

Instructions

  1. Prepare the Meatloaf Mixture:
    • Preheat your oven to 350°F (175°C).
    • In a large mixing bowl, combine the ground beef, breadcrumbs, milk, eggs, finely chopped onion and bell pepper, shredded cheese, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.

    • Bake in the preheated oven for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).

    • While the meatloaf bakes, heat the butter in a skillet over medium heat. Sauté the sliced onions and green bell peppers until soft and caramelized, about 8–10 minutes.
  4. Add the Cheese:
    • Once the meatloaf is cooked, remove it from the oven. Lay the provolone cheese slices on top and return it to the oven for 5 minutes, or until the cheese melts.
  5. Finish with Topping:
    • Remove the meatloaf from the oven and top with the sautéed onions and bell peppers.
  6. Serve:
