Golden Apple Velvet Clafoutis
Serves: 6–8 Ingredients
3 medium golden apples (peeled, cored, thinly sliced)
3 large eggs
3/4 cup (150 g) granulated sugar
1 cup (240 ml) whole milk
1/2 cup (120 ml) heavy cream
1/2 cup (65 g) all-purpose flour
2 tbsp (30 g) melted butter (plus extra for greasing)
1 tsp vanilla extract
1/2 tsp cinnamon (optional)

- Prepare the apples
Preheat oven to 180°C (350°F).
Butter a baking dish (8–9 inch / 20–23 cm).
Arrange apple slices evenly in the dish.
Optional: lightly sauté apples in a little butter for 5 minutes for deeper flavor. - Make the batter
In a bowl, whisk eggs and sugar until pale.
Add milk, cream, melted butter, and vanilla.
Whisk in flour, salt, and cinnamon until smooth (thin batter is normal). - Assemble
Pour batter over the apples.
Tap gently to remove air bubbles. - Bake
Bake for 40–45 minutes until golden and set in the center.
The edges should puff slightly and turn lightly crisp. - Cool & serve
Let cool for at least 15 minutes (it firms up as it rests).
Dust with powdered sugar before serving.Tips
Best served slightly warm or at room temperature
Use sweet apples like Golden Delicious for that “golden velvet” texture
Add a splash of rum or almond extract for a French-style twist
