Zucchini Patties
Ingredients
2 cups grated zucchini
2 eggs, beaten
¼ cup chopped onion
½ cup all-purpose flour
½ cup grated Parmesan cheese
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder (optional)
2–3 tbsp oil (for frying)
Instructions
Prep the zucchini:
Place grated zucchini in a clean towel and squeeze out as much moisture as possible (this is key for crispy patties).
Mix the batter:
In a bowl, combine zucchini, eggs, onion, flour, Parmesan, salt, pepper, and garlic powder.
Stir until well combined (mixture should hold together).
Heat the pan:
Heat oil in a skillet over medium heat.
Form & cook:
Scoop about 2 tablespoons of mixture per patty into the pan.
Flatten slightly with a spatula.
Cook for 3–4 minutes per side until golden brown and crispy.
Drain & serve:
Remove and place on paper towels to drain excess oil.
Serving Ideas
Sour cream or Greek yogurt dip
Garlic aioli
Marinara sauce
Sprinkle with extra Parmesan
Tips
If mixture is too wet, add a little more flour
Add chopped herbs (parsley, dill) for freshness
For a lighter version, bake at 200°C (400°F) for 20–25 minutes, flipping halfway
