Homemade Tomato Soup

A rich, comforting tomato soup packed with fresh vegetables, herbs, and deep flavor—perfect for dinner tonight! Ingredients
12 ripe tomatoes (chopped)
1 onion (roughly chopped)
1 red pepper + 1 yellow pepper (chopped)
2 garlic cloves (minced)
Handful of fresh basil
2 Oxo cubes (beef)
1 mug (about 250–300 ml) water
2 tbsp olive oil
Salt & black pepper (to taste) Instructions
- Roast the Vegetables (for deeper flavor)
Preheat oven to 200°C (400°F)
Spread tomatoes, onion, peppers, and garlic on a baking tray
Drizzle with olive oil and sprinkle with salt & pepper
Roast for 25–30 minutes until soft and slightly caramelized
(Optional but highly recommended for extra richness!) - Simmer the Soup
Transfer roasted veggies to a pot
Add:
water
crumbled Oxo cubes
Bring to a gentle simmer for 10–15 minutes - Blend
Add fresh basil
Blend until smooth using a hand blender (or regular blender) - Adjust & Finish
Taste and adjust seasoning
Add a bit more water if too thick
Simmer 5 more minutes if neededServing Ideas
