Cloud Cake Recipe

Ingredients

  • 200 g cream cheese, softened
  • 50 g unsalted butter, softened
  • 100 ml milk
  • 4 large eggs, separated
  • 70 g granulated sugar
  • 40 g cake flour
  • 10 g cornstarch
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 150°C (300°F). Line an 8-inch round cake pan with parchment paper.
  2. Melt mixture: In a bowl over hot water (or microwave gently), combine cream cheese, butter, and milk. Stir until smooth. Let cool slightly.
  3. Add yolks: Mix in egg yolks one at a time. Add vanilla.
  4. Sift dry ingredients: Add cake flour and cornstarch. Mix until smooth.
  5. Whip egg whites: In a clean bowl, beat egg whites. Gradually add sugar and beat until soft peaks form.
  6. Fold carefully: Gently fold the whipped egg whites into the batter in 3 additions.
  7. Prepare water bath: Pour batter into pan. Place cake pan inside a larger pan filled with hot water.
  8. Bake for 50–60 minutes until lightly golden and set.
  9. Cool slowly: Turn off oven, leave door slightly open for 15 minutes. Remove and cool completely.
  10. Serve: Chill for extra fluffiness or enjoy at room temperature.

Result

A soft, jiggly, fluffy cheesecake-like cake that melts in your mouth.
