Cloud Cake Recipe
Ingredients
- 200 g cream cheese, softened
- 50 g unsalted butter, softened
- 100 ml milk
- 4 large eggs, separated
- 70 g granulated sugar
- 40 g cake flour
- 10 g cornstarch
- 1 tsp vanilla extract
Instructions
- Preheat oven to 150°C (300°F). Line an 8-inch round cake pan with parchment paper.
- Melt mixture: In a bowl over hot water (or microwave gently), combine cream cheese, butter, and milk. Stir until smooth. Let cool slightly.
- Add yolks: Mix in egg yolks one at a time. Add vanilla.
- Sift dry ingredients: Add cake flour and cornstarch. Mix until smooth.
- Whip egg whites: In a clean bowl, beat egg whites. Gradually add sugar and beat until soft peaks form.
- Fold carefully: Gently fold the whipped egg whites into the batter in 3 additions.
- Prepare water bath: Pour batter into pan. Place cake pan inside a larger pan filled with hot water.
- Bake for 50–60 minutes until lightly golden and set.
- Cool slowly: Turn off oven, leave door slightly open for 15 minutes. Remove and cool completely.
- Serve: Chill for extra fluffiness or enjoy at room temperature.
Result
A soft, jiggly, fluffy cheesecake-like cake that melts in your mouth.
